Dies ist mein Lieblingsrezept / My favourite recipe:
Indian Buttered Chicken (für 4 Personen)
100g Butter
1 EL/tbsp Öl/oil
2 gehackte Zwiebeln / 2 chopped onions
1 TL gehackter Ingwer / 1 tsp chopped ginger
2 TL / 2 tsp Garam Masala
2 TL gemahlener Koriander / 2 tsp ground coriander
1 TL Chilipulver / 1 tsp Chilli powder
1 TL schwarze Cuminsamen / 1 tsp black cumin seeds
1 TL gepresster Knoblauch / 1 tsp crushed garlic
1 TL Salz / 1 tsp salt
3 ganze grüne Kardamom / 3 whole green cardamoms
3 schwarze Pfefferkörner / 3 whole black peppercorns
150 ml Naturjoghurt / natural yogurt
2 EL Tomatenmark / 2 tbsp tomato purée
8 Hähnchenteile ohne Haut / 8 chicken pieces, skinned
150 ml Wasser / water
2 Lorbeerblätter / 2 bay leaves
150 ml Sahne / single cream
Butter und Öl in einer Pfanne erhitzen. Zwiebeln hinzufügen bis sie golden angeschwitzt sind. Hitze reduzieren. Den gehackten Ingwer mit Garam Masala, Koriander, Chili, Cumin, Knoblauch, Salz, Kardamom und Pfefferkörnern in einer Schüssel verühren. Joghurt und Tomatenmark hinzufügen und nochmals verrühren. Das Hähnchen in die Marinade einlegen und etwas ziehen lassen. Dann das Hähnchen zu den Zwiebeln in die Pfanne geben und von beiden Seiten gut anbraten. Dann Wasser und Lorbeerblätter hinzufügen und 20 Min. köcheln lassen. Die Sahne und die restliche Marinade hinzufügen und weitere 10 Min. köcheln lassen. Dazu schmeckt Reis.
Heat the butter and the oil in al large frying pan. Add the onions and fry until golden, stirring. Reduce the heat. Crush the ginger and place it in a bowl. Add the garam masala, coriander, salt, chilli, cumin, cardamoms and peppercorns and blend. Add the yogurt and tomato purée and stir to combine. Add the chicken to the mixture and stir them to coat well. Add the chicken to the onions and stir-fry vigorously about 5-7 min. Add the water and the bay leaves and leave to simmer for 20 min. Add the cream and rest of marinade and cook for a further 10 min. Serve together with rice.
