L'abondance est un fromage français de la région
Haute-Savoie.
Il est entièrement fabriqué au lait cru entier, et présente un
fondant et des arômes très développés, bien qu'un peu moins
puissants que ceux du beaufort.

Les fromages abondance sont fabriqués avec le lait de vaches de
races Abondance, Tarine ou Montbéliarde. Leur zone de production
d'origine est le pays d'Abondance dans le Chablais en
Haute-Savoie.
L'abondance peut être fermier ou artisanal. C'est un fromage à
base de lait cru entier de vache, à pâte pressée mi-cuite (le
travail en cuve ne dépasse jamais les 50 °C), affiné pendant 90
jours sur des planches d’épicéa. Les meules dont les talons
sont de forme concave comme le beaufort, sont d'un poids moyen de
10 kg. Elles sont à croûte lisse présentant les marques de la
toile, de couleur ambrée. La période de dégustation optimale va de
juillet à novembre avec un affinage optimal de 4 à 6 mois.
Le Chablais est réputé pour son fromage depuis au moins le XIVe
siècle grâce aux productions des moines de l'abbaye de Sainte Marie
d’Abondance à proximité de la frontière suisse et des
chanoines de l'abbaye de Saint-Maurice d'Agaune dans le Valais qui
fournissaient la papauté d'Avignon.

Cheeses abundance are made with the cow's milk of races Abundance,
Tarine or Montbéliarde. Their zone of production of origin is the
country of Abundance in Chablais in Haute-Savoie.
The abundance can be a farmer or craft(home-made). It is a
cheese with whole unpasteurized milk of cow, in semi-cooked
pressing dough (the work in tank never exceeds 50 °C), refined
during 90 days on boards of spruce. The grindstones heels of which
are of concave shape as the beaufort, are of a 10 kg middleweight.
They are in smooth crust presenting the marks(brands) of the
painting(cloth), the amber color. The period of optimal tasting
goes from July till November with an optimal refining from 4 to 6
months.
Chablais is considered as its cheese for at least the XIVth
century thanks to the productions of the monks of saint Marie's
abbey of Abundance near the Swiss border and the canons of the
