Ingredients:
1 ½ cups of all-purpose flour (375 ml)
1 cup rolled oats (250 ml)
½ cup white sugar (125 ml)
1 Tbsp. Baking powder (15 ml)
½ tsp. Salt (2.5 ml)
2 eggs (2)
2/3 cup milk (150 ml)
1/3 cup vegetable oil or melted butter (75 ml)
1/3 cup maple syrup (75 ml)
1 ½ cups coarsely chopped pecans (375 ml)
Ingredients for Maple Butter:
½ cup butter, softened
½ cup maple syrup
Method:
Beat eggs.
Combine flour, oats, pecans, sugar, baking powder and salt.
Next, add milk, vegetable oil and maple syrup to eggs.
Add the milk mixture to dry ingredients, stirring until just moistened.
Spoon into muffin pans.
I prefer to line the muffin pans with paper baking cups.
Preheat the oven to 400° F.
Bake the muffins for 25 minutes.
Make maple butter.
Beat together maple syrup and butter, spread on warm muffins and enjoy!
